Coarse-Grain Dijon Pork Chops & Steamed Asparagus

My taste buds were really craving honey/coarse-grain dijon mustard last night, so I went to the store and bought a bunch of things I felt would complement that very specific (and random) craving. 

I left with yellow onions, mushrooms, scallions, asparagus, pork chops, honey mustard, and of course, coarse-grain dijon mustard. 

As the pork chops were grilling and the asparagus (cut in half) were steaming, I chopped up the veggies. Once the pork chops were cooked on both sides, I set them to the side and got a pan to make the sauce.

The sauce was pretty simple, just a layer of milk (next time I’m going to use heavy cream because milk definitely evaporates) and olive oil with honey mustard and the dijon mustard all mixed together and set to simmer.

Once the sauce began simmering, I threw in the chopped yellow onions, mushrooms, and scallions. I also added a bit of dill and parsley. Once the veggies softened a bit, I reintroduced the pork chops into the pan and let it all cook together. 

I took the asparagus out of the steamer and coated them in a decent helping of butter. Added the pork chop sauce and veggies on top of a small bed of rice. 

Then I ate it. All of it.

(okay I ate half of it, but I didn’t want to be greedy)
